This is a great accomplice to a grilled chicken breast or any protein source.

Basically what you do is this:

Cut up into wedges whole ripe red and orange tomatoes. Place them in a large bowl with several sliced garlic gloves and sliced basil and salt and pepper. Fill with olive oil and place in refrigerator for four hours. Make serve over your favorite pasta. This dish is light and healthy, giving you good fats from the olive oil. Great dish for post-work! Easy because you can make it ahead of time and keep it in the refrigerator!

I started eating something similar after my grandmother served a tomato salad from the german butcher that I really liked. Essentially your recipe, but add some sliced cucumber, and a little diced red onion.

good stuff man i like light dishes like this, deffinatly will work well with chicken or fish, beef however is more of a thick meat gravy (er..sauce..im italian lol)
