This is my new favourite recipe. As an added bonus, I made it from scratch in under 10 minutes.
Ingredients
1/2 cup couscous
1/2 cup water
1/2 cup chopped cucumber
1/2 cup halved cherry tomatoes
1 green onion, thinly sliced
1 can chunk tuna, drained
1 tbsp olive oil
1/2 tsp thyme
1/2 tsp oregano
shredded cheddar cheese, salt and pepper to taste
Directions
In a small pot, bring water to boil. Add couscous, cover and remove from heat. After 5 minutes fluff couscous with fork. Add olive oil, thyme, oregano, cucumber, tomatoes and tuna to couscous and mix. Sprinkle with cheese and chow down.
