I took some left over pesto I made the other night (walnuts, Parmesan, fresh basil, salt, pepper and extra virgin olive oil blended together) and mixed it with some mayo. I used 1 tbsp mayo for every 2 tbsps of the pesto. I spread that out on a spinach tortilla and topped it with some grilled chicken, purple onions, baby spinach leaves, and chopped lettuce.

REALLY yummy, folks! Really good! Love wraps but this one is my new fave. I just love how versatile pesto is too. It's not just for pasta. You can really play around with it.
