Guys, I LOVE squash and it's readily available all the time but especially in fall. Here's one of my favorite dishes that goes really well with roast chicken. I take squash (whatever kind you like) and peel it. Ct it up into 1x1 inch cubes and spread out on a cookie sheet or shallow baking pan. Then halve new potatoes (red skin ones for color) and also spread onto the sheet. Now drizzle extra virgin olive oil over the op and sprinkle salt and pepper across. Massage together to coat well. Bake off at 400 for about 30 minutes or until everything is golden and the whole kitchen smells amazing. Transfer to a big bowl and add chopped fresh parsley and another drizzle of olive oil. Serve alongside that roast chicken and you have a big hit.
