Just a simple dish I enjoy. Perhaps not the healthiest meal, but its very quick, easy and tasty.
Boil up some brown rice, and dice up some bacon. When the rice is nearly cooked, fry the bacon in a fry pan. Then add the rice and some eggs (I prefer plain egg white, but whole eggs work). Stir until the eggs are cooked. Now add some soy sauce and enjoy.
This meal is very tasty, and can be easily modified by adding corn, mushrooms, or whatever you feel like.
Sorry I don't have any measurements, I just go with what ever is in the fridge, it's pretty hard to mess up. Cook up a large batch, store it in the fridge and heat up when ever you need a quick meal.
