Hey guise, I seem to remember reading on this subforum that cooking olive oil releases carcinogens. My mom cooks with olive oil all the time and I'm concerned for her health. Is this nonsense, or is cooking with olive oil unwise?

I believe if it is heated past smoking point it can which is why it isn't good for frying, but sauteeing and light cooking is fine.

You can google it just as easy as I can. There is info all over the net. Olive oil smokes at 320 or so, and at that point some bad stuff can happen.

Yea, you don't wanna burn your oil. EVOO and coconut oil are supposed to be the best oils to use if you're going to fry something.......you're better off not eating fried stuff in the first place, but.....cubed potatoes fried up in some coconut oil in an iron skillet are damn hard to resist.
