Chicken risotto (http://www.cooks.com/rec/doc/0,1639,157189-225197,00.html) is pretty easy to make.
The two tricks to this dish are to keep the rice moving while it's browning, don't let it burn, then after you add the broth and cover it, DO NOT TAKE THE LID OFF. That's a common mistake people make when cooking rice. Leave the lid on and let it steam properly.
I made a full recipe and ate about 1/3 of it and I'm pretty stuffed. Definitely give it a shot.
