Started my cut Jan. 1, went from 225lbs to 217lbs (8lbs loss) in a week. Calories are probably 1800 - 2000.
Diet is:

1. Eggs, toast or oatmeal
2. protein shake
3. beef or chicken with rice + beans or veggie
4. protein shake
5. beef or chicken with rice + beans or veggie
6. protein shake, skim milk, blended banana + creatine.

Last meal is probably around 6pm, 7pm... think I've lost a lot of muscle mass in a week's time? Numbers don't seem to be dropping... then again it's only been 1 week.

It's water. Unless you lose another 8 lbs next week don't worry about it.

That's not really a huge percentage of bodyweight, but like BB said, it's probably mostly water. That happens at first when you cut out a lot of carbs. You're diet looks pretty spot-on, though.

I agree, I remember those days when I ate like that all the time. You are going to look pretty damn ripped in a few months!

Essential Fatty Acids.

Like, say, Omega 3?

I seem to be experiencing this too right now. I was at about 171-173, and my goal was to lose about 5 or 6 pounds before spring break. Now I'm already down to 167 and its only been a few days.

I'm guessing that it's mostly water like already said above, and I'm assuming I should just stick to the diet until the initial losses are done, but here's my question: Once I drop the initial water, do I still want to lose another 5 pounds? Or how can I judge when I've lost 5 pounds of actual fat?
