About the sex of the animal you are eating?

And wouldn't it affect the taste and macronutrient contents? Male's and female's have different body compositions so wouldn't that effect the amount of fat and protein in meat? Wouldn't the hormones in the meat also be different?

I did before. Now I only eat sausage.

Plus, thats not as gross as what I was thinking, where you'd actually see the shape of penis in the food, or you'd bite into a piece of beef and get a mouthful of a white salty fluid.

The sex of a creature has no effect on its tissues. At least as far as fat/muscle is concerned. Male and female of all species of animals have muscle and fat. Maybe not in equal quantities but a pound of muscle is a pound of muscle no matter where it comes from.
