sorry if I sound like a newb... But diet is my biggest weakness. How do I diet so I lose most my weight from my stomach and NOT other places? How many meals a day and when should I eat them? And is it possible to lose fat while gaining muscle and strength?

You can't lose weight just from your stomach unless you get lipo. You will lose weight as a whole. On males stomach and lower back are the last two places to drop fat so just focus on dropping fat overall and sooner or later it will start to come off.
Meal timing and number is whatever makes you happy and comfortable. Some people like several small meals, others like to do fasting type approach with more calories around training or later in the day.
Is it possible? Yes. It is easy, no. Most of the time your better off on focusing on one then the other.
