I use baked Tostitos as they are probably healthier than fried.

Take one serving (about 20 full sized chips)

Calories: 110
Carbs: 24
Fat: 1g

Add in 1 cup of part skim Mozzarella cheese.

Calories: 341
Fat: 22.6g
Carbs: 4.3g
Protein: about 30g

Add in 8oz (weighted when raw) of cooked skinless chicken breast

Calories: 235.6
Fat: 5.1g
Carbs: 0
Protein: 44.3

Add in vegetables and such. Salsa makes a nice healthy dip. Throw in the microwave until cheese in the center is fully melted.

Overall, this comes to

Calories: 686
Fat: About 28g
Protein: About 77g

This takes literally 2 min to do assuming the chicken is already cooked. It's a great way to have a cheat meal that isn't even cheating!

Not bad actually, I might try these out. I love Tortilla Chips and Dip btw.

If you reeaaally want to make nachos...you gotta put some decent beans and guacamole on it too!...you could also switch it up and use ground beef

I made something almost exactly like this yesterday, but I put some cottage cheese with it.

mmmmmmmm that's a kick ass snack.
Anything with a 1/2 lb of chicken breast isn't cheating :p

sweet. ive done this before to make a "Mexican Tortilla Chip Pie." The options are many. I like to use corn, black beans and navy beans, steak, chicken, cheese, rice and salsa. (+ chips)

Isn't there a lot of salt on Tortilla chips, or are there low-sodium varieties?

130 mg of sodium per serving. Anything with tortilla chips, chicken, and cheese is awesome. Doesn't look bad calorie wise either.
