Did some hard training over the weekend and Sunday morning wanted to cook up something to give my body the fuel that I needed to recover.
Mixed up a new recipe that I call "Recovery Pancakes"
Ingredients:
2 cups whole wheat pancake mix (I used Aunt Jemima brand)
2 cups skim milk
2 egg whites, 1 whole egg
3 scoops strawberry opticen
Add sugar free syrup (I prefer smuckers brand)
Blend with a whisk and cook 4-5 tablespoons at a time. Will make about 5 large size pancakes which is enough for 2-3 people (or two meals). These are great for people on the go as well. I kept one pancake aside and put it in a tupperware, ate it on my way to work today like a giant cookie while driving.
*Another recipe that I have tried is vanilla opticen with some vanilla extract and cinnamon which was also very good.
