Here is a quote I showed my gf about lifting...
This program is a strength and muscle-developing program. There is no law that says 'girls' need to use pink dumbbells or do easy exercises. Many women are afraid that if they put down the pink dumbbells and so much as touch a barbell that they will turn into hulking she-males. These same women might also assume that women train one way and men another. This is not true, men and women should ideally train in the same manner. Quite simply, without hormone therapy and anabolic drugs, no woman is ever going to develop the mass that a male does. She won't get massive, no, but she will get "shapely," and yes, she can get still get strong like a male does. In this regard Starting Strength is ideal for the female trainee.
Edit- chances are yes she will gain some lean muscle and shed some fat if her diet is right. She will have a more toned, athletic look. Tell her squats will make her ass big and firm. She will love squats.

Also, ask her to explain to you how she thinks that she will "build muscle" while eating below maintenance calories. Tell her that if all she does is cardio then in the long run its no good. As she loses weight she will have to eat less and less in order to lose more weight. If the diet and lifting is right she will be able to maintain a decent level of calories and still lose weight (as she will have less muscle loss).
To be honest, it's taken me over 3 years to get my parter to believe what i've been telling her. She knew deep down that fad diets never work but still wanted to believe it.

fat, carbs, and protein can make you gain weight. fat, carbs, and protein can make you lose weight. carbs alone dont makey you gain.
calories make you gain weight
figure out her maintanence calories(google that if you dont know what it means)
have her eat about 80% of that, and KEEP TRACK of them
keep her lifting
eat these foods: http://whfoods.org/foodstoc.php
the whole "dont want to get big" is overrated...
it cant happen...

I hate when people say they are worried about being too muscular or big. It doesnt happen overnight and is always intentional. For a woman to put on muscle like a guy would take lots of food and drugs.

That'll definitely make her avoid weight training. Almost no women want that much mass or to be that lean.
No offense to Built..

And to have that much mass or be that lean requires little effort?
I think the point was missed.
