Ok I know how much protein I should be taking in and I know I build muscle when I am outside the gym, but should I continue taking in the same amount of protein on my off days as I do training days? Sorry if it is a dumb question.

This is going to sound insulting but so does everything I say whether I mean to or not so I've stopped caring.

The fact that you're asking the question suggests that you're not far enough along to have to be concerned with varying the amount of protein you get on training days vs off days so to make it easy, yes.

Keep it simple until simple stops working.

You already said you built muscle when outside of the gym, so how do you expect to make the happen if you don't give your body what it needs to build new muscle?
