VERY simple, but I enjoy it so I figured I would share...
Boneless Skinless Chicken Breast
Ranch Dressing (Powder Form Seems To Work Best)
Olive Oil (or Cooking Oil of Choice)
Thaw chicken, preheat oven to 375. Place chicken breasts on a sheet of aluminum foil. Slice a few slits in chicken breast that run with the grain. Pour a sensible amount of olive oil over the chicken then powder the breasts with the ranch dressing, and maybe some salt-pepper, etc. to taste. Fold up the sides of the foil like you would if you were making hobo potatoes (the intention is to cover the breast in the wrap so it cooks in the juices.)
Bake on a middle rack for 35-40 minutes depending on the thickness of the breast. Voila! Tastes fantastic with almonds and some asparagus.
