I was experimenting in the kitchen and came up with this variation on the classic Spanish Omelette. It's actually quite nice and loaded with protein and good fats.
Slice 1 large or 2 small sweet potatoes as thinly as you can.
Cook them in a pan on a high heat over 1 tbspn of Olive Oil, stirring frequently (the aim is not to let them brown too quickly).
Take 200g of Chicken breast, dice it and steam or grill it.
Roughly chop a tomato.
In a large mixing bowl, mix 1 whole egg and 4 egg whites, just enough to mix them yolk in.
Add the sweet potatoes, the chicken and the tomato to the bowl and mix a little.
Put another tbspn of Olive Oil in the pan, add the mixture and then turn the heat down really low. Let it cook for a few minutes, turn and cook for a few minutes more.
Calories: 900
Fat: 50g
Carbs: 27g
Protein: 78g
You can add cheese or cottage cheese for extra good stuff.
I recommend cutting this into 2 servings as it is quite big.
