This goes really well with both pork and beef. Probably work with chicken too but haven't tried it.

Dice and combine:

1 large tomato
1/2 red bell pepper
1/2 red onion
1 fresh jalapeno (with seeds)
1 peeled mango

To that, add 2T white wine vinegar, a large pinch of kosher salt, and the juice of one lime, stir to combine.

Add one finely diced avocado and mix gently. The avocado will fall apart and get smashed if you're too rough with it. Cover it and let it sit in the fridge for at least a half hour. Mix it up again and serve it on the side or on top of pork chops, steaks, or pretty much anything.

If you'd like it a little more creamy, add a tablespoon of olive oil. If you want it sweeter, throw in another mango. If you don't like jalapenos, substitute your favorite hot pepper.

Hell, substitute whatever you want. Try it, see what you think. It's got an amazingly fresh and very light flavor.
