Should one always use the maximum arch whilst benching? Or should you relax a little on non ME sets/days? I try to use as much arch as possible always when benching. correct or incorrect?

No it is not. In fact, correct arching will make you much more stable on the bench.

If I arch to much I have a hell of time keeping my ass on the bench, mind you this kind of arch I can fit a 4 board under.
