View Full Version : Simple Recipe: Chicken & Rice (soup/stew)

Goal is to to make a simple yet nutritious meal.
Recipe makes 5 servings and should be eaten with 6 days.

6qt Pot

3qt water
2lbs chicken breasts
1 cup rice

3 carrots (cut in small slices)
3 celery stalks (cut in small slices)
5 cloves garlic (cut in small slices)
1 whole onion (diced)
2 tsp cayenne pepper

Get water to boil
Add optional veggies + seasoning
After 10 minutes of boiling add chicken breasts (ensure they are submerged)
After 15 minutes of boiling add 1 cup of rice (or less)
After 15 minute of boiling turn off heat and remove chicken and dice it (small enough so you don't need to cut it when you are eating it!)
Let sit for 15 minutes then divide into tupperwear for portion control.

End result ends up being fairly watery (rice does not typically absorb all the water). Lessening the amount of water often results in unsubmerged water, increasing rice would help, but obviously adds more carbs.

For extra zing add a full bunch of diced cilantro (20 sprigs) when rice is added.

kick a! i've got 5 lbs of chicken i didn't know how i wanted to cook, now I do :)

Tried this recipe the other day and it was great! The only extra thing i added was some chicken boulian cubes. Great recipe!

Seems like the type of recipe you could use with a crockpot. Stick it all in the crockpot in the morning and by the time you get home from work you'll have yourself a nice stew. Good recipe.

I usually just add everything together and eat it. Not worth all the delicacy, ya know?
