Ive kept the stance somewhat between my clean/snatch starting and squat position. Any other comments would be appreciated. Certainly an excersise I want to make very strong.

Looked good...
For lower back work, do the round back form
For hamstring work, arch your back
I think you'd benefit from both a wide and narrow stance as well, maybe do a couple each?

how would you round the upper back without a safety squat bar?

Try to push your butt back more. You're mostly bending over at the waist.
