The doctor put me on a low fat diet as my body is unable to sufficiently digest fats. Is there a way I can get around a 3000 calorie diet with low fat (20% of calories or less?)

That would be like 60~70g of fat a day...if my calculations are correct...

dooable, but not the best route, because dietary fat plays a major role in helping the body build muscle from helping coat cells and also helping the body produce test.
imo your best alternative would be lots of potatoes and oatmeal for good carbs, as well as whole wheat bread and other items like that, they have tons of complex carbs and little to no refined sugars
