In a bowl, combine one tbsp active dry yeast with one cup warm water and 1/2 cup warm cream or evaporated milk. Mix in one cup of high quality honey and 4 tbsps canola oil. Sprinkle in 1/4 tsp salt. Stir in, one cup at a time, 4 total cups of whole wheat flour. Cover and let rise for an hour or so.
Once risen, punch the dough down, after pulling it from the bowl onto a floured surfaced. Knead very gently (we want this fluffy and not chewy like a bagel) for a minute or so. Cut into 8 equal parts and shape into little balls, folding any edges under. If you like, you can stuff each one with something delightful (custard, pitted figs, caramel, etc). The ones pictured here are stuffed with some boiled condensed milk. Line em up on a greased baking pan and cover. Let rise one more hour.
Give em a brushin' with one beaten egg for a golden colour. Bake for 20-25 minutes at 375 -- till golden brown. The smell will fill the house and you'll know they're ready.
