One of my favorite things of it getting cooler out is eating chili. Here is a pretty simple recipe I put together from a recipe here and a recipe there. You can make it spicier if you want by adding some peppers but I am not a fan of real spicy chili.

At the grocery store pick up the following:

2 pounds ground beef
1 pound steak
2 large yellow onions
6 cloves garlic
2 tablespoons chili powder
1 teaspoon cayenne pepper
3 teaspoons salt
2 teaspoons dried oregano
2 cans stewed tomatoes (14.5 ounce)
1 can of Ro-tel
1 can tomato sauce (15 ounce)
2 can's of Bush's Chili beans

Mince the garlic, cut up the onions, and chop up the steak into small bites.

Throw the ground beef, steak, onions, and garlic in your pot, brown, then drain.

Add in your spices

Throw in everything but the beans

Bring to a boil and then reduce heat to a simmer and cover for an hour to an hour and a half.

Add the beans and let simmer for around half an hour uncovered

and enjoy. I have a pot almost done now and I am about to dig in a little early :D

You can definitely add in your own tastes to this, if you have more time and aren't lazy you can get fresh tomatoes and peppers and do the beans yourself but this tastes pretty damn good so who cares?

Something you can try to mix it up is chop up a few stalks of celery, it adds a little something.

I just made a whack of chili last weekend and yes the addition of celery is fantastic.

If you add celery then its not a big jump to also grate up some carrot and leek in order to make a really special "aromatic base". Done properly this essentially melts into the chilli giving it so much texture and flavour.

I think the secret to GREAT chilli is layering similar, complementary flavours so that every taste has multiple dimensions. Instead of just using yellow onions, adding a couple of red ones as well. Instead of just one chilli powder, add some fresh chilli peppers, or even several types of chilli pepper. Making a good chilli oil first out of a number of complementary spices makes a big difference too.

Making some tonite. Using crock pot and cooking over night tho. I'll let ya know how it turns out tommorow.

Here is his recipe list:
2 lbs course ground beef
2.5 lbs tri-tip, trimmed and cubed
1 can peeled whole tomatoes
1 can Rotel
1-2 minced jalapenos (more or less depending on how spicy you want it)
4-5 crushed/minced garlic cloves
1/2-1 cup chopped white onion
1/4-1/2 cup chopped cilantro
Lime juice from 1 large lime
Thickener (corn starch, masa, flour, etc)
2 Shiner Bocks


Chili Mix (all measurements heaping!):
2-3 tbsp chili powder
1+ tbsp cumin
1 tsp ancho chili powder
1 tsp chipotle chili powder
1 tsp paprika
1 tsp cayenne
1 tsp Mexican oregano leaves
1-2 tsp black pepper (to taste)
1-2 tsp salt (to taste)

Got this one from 70sbig sounds pretty good, going to give it a try next week sometime. I've still got plenty of leftovers from my moms chili to eat yet.

chili powder
cayenne pepper
salt
black pepper
basil seasoning
1 cans stewed tomatoes
1 can of Ro-tel
1 can tomato sauce (15 ounce)
2 can's of Bush's Chili beans
3 stalks celery
3 carrots(chopped)
chopped parsley

Browned the meat and onions, tossed it all in a crock pot for 7-8 hours on low, then let it sit on warm for 4 hours. I have to say, If I can continue to afford this, this will be a staple in my diet.:bow:

Any one tray to eat chocolate chili recipes , I really like eat this recipes, Its something different but its having a good test, If you want to make it so ....

2 cans sliced mushrooms
1 ripe olives
1 lg. onion diced
1 lg. green pepper diced
1 can diced green chiles
1/3 c. chile powder
2 tbsp. sugar
2 tbsp. horseradish mustard
1 tbsp. cocoa powder
1 tsp. garlic powder
1 tsp. sage
1 tsp. paprika
1 tsp. ground pepper

When you say one can of tomato sauce do you mean tomato soup or something like pataso which is just tomato puree?

I am from the UK so am substituting ro tel for chopped tomatos with chilli, so i need 1 can of stewed tomatoes? 1 can of tomato sauce? i can of tomatoe with chilli and 2 tims of beans?

After seeing this i am going shopping tonihgt and making this for tomorrow!! It looks amazing cheers

I love chicken chilli recipes

500-600gms. boneless chicken (cut into1-inch cubes)
2 tbsp Soya sauce
1 egg
2 tbsp corn flour / corn starch
1 tsp garlic paste
2 green onion tops (finely chopped), if available
5-6 green chilies (finely chopped)
Salt To Taste
1/2 tsp white pepper powder or to taste
1 tsp sugar
A pinch of ajinomoto (optional)
2 cups chicken broth / water
1 tbsp oil
Oil to fry

1 pound lean ground beef
1 cup diced onion
2 cloves garlic, finely choppe
2 (16-ounce) cans kidney, pinto or black beans, drained and rinsed
2 1/2 cups Salsa - Thick & Chunky
1 (4-ounce) can Diced Green Chiles
2 teaspoons chili powder
1/2 teaspoon ground cumin
1. 1. Cook and drain the ground beef, onion and garlic in large skillet until beef is browned.
2. 2. Add the beans, salsa, chiles, chili powder and cumin. Bring to a boil. Reduce heat to low; cover. Cook, stirring frequently, for 20 to 25 minutes.
3. 3. Garnish as desired before serving.

Chilli recipe is my favourite and I know it to make in different varieties. I add sugar and butter milk for gravy. I made above all recipes of chilli and alls tests was so awesome and yummy.
