I started a cut this week, eating about 2300-2500 cals. 200g protein about 70g fats. I have put on 800grams this week, wtf?

This, 800 grams could be anything from retaining water to having to take a big dump or something. I fluctuate around 1-3 lbs from day to day.

Keep doing what you are doing and do not change anything for another week, if you are the same weight OR if you increase again - Drop calories by 300.

Are you weighing yourself at the same time and same conditions? My weight varies 5-6lbs in a day and this week alone I've been anywhere from 202.4 to 211.8 yet I'm still losing and cutting fine.

Like everyone else has mentioned, there are numerous things that can affect your weight including hydration status, sodium intake, time of day, etc.... Don't get too concerned about one measurement, but try and "standardize" the conditions for your weigh-in days as much as possible.
In working with people on weight loss over the years, I've noticed that in many cases weight loss is not linear from week to week even if the diet and exercise stay the same. For example, someone might lose 1 lb. one week, then no weight the next week, then lose 3 lbs. the next week all while following the exact same diet and exercise plan. If you plotted your weight over time it would probably zig-zag from week to week, but look at the overall trend. Is the zig-zag line trending up, or down, or staying the same.

How much do you weigh? This looks like a keto diet. You did not list any carbs.

If this is a keto, (depending on your weight) your protein is too low.

If you are on a keto diet, it can take as long as two-three weeks for your system to make a full metabolic shift.

More info is needed from you to point you in the right direction...

He's getting around 800 or so calories from carbs. 200g protein and 70g fat is about 1400 cals.

Thank you....I just re-read that....

Madman, looks like you are taking in around 200 or so carbs per day, is that right?

If so, and you are trying to cut- your fats are too high....drop them to about 35g a day. I weigh 180, and on my last prep my fat intake was 35g a day.
