View Full Version : Anyone dry aged beef at home?

What is your setup like?

I just threw some rib eye into the refrigerator. No UV light or anything fancy. I pat it dry once a day and make sure it has good air flow. I love the taste of aged beef, especially dry. But that **** is expensive. I can't afford it anymore.

Dry aged beef at home is hard to do properly, and not that recommended. It is also very expensive because the dry aging process causes a dramatic loss of weight (as much as 15-20%) due to shrinkage and trimming.

I came here to post the same link! Alton Brown is amazing, and is my favorite (male) chef (<3 Giada). I make a ton of stuff based off of or directly by his recipes. I live off of his lamb and barley stew.

Just wanted to say this is really easy and makes a HUGEEEE difference in how the meat tastes. Just stick the meat in the back and bottom of the fridge and don't leave the door opened too long. Beef tastes so much better with some aging. I did it for only one week. going for 2 now.
