If I ate like low-fat or non-fat meals all day and had like my 40-50 grams of fat for one day in one sitting, is that OK?

i think it will be optimal to spread it out.

it will help lower the Gi through out the day.

If you get it all in one sitting, I believe your body will convert it to body fat after that one sitting then break it down as the rest of the day goes on. Problem is that it's not an effective way to get your fat soluable (sp) vitamins and minerals. Don't know for sure though.

And watch out for no-fat products, they usually just add tons of sugar to replace the taste of the fat. Read the label and compare it to the regular fat versions.

skim milk has a lot more kcals than regular as well

skimmed milk does not have more kcals than normal full fat milk.
the only reaosn it has neglible amount of carbs more is the the non-fat concentriaion increase by 3%.
