What's up with the 3g net impact carbs when there is actually 31g? The insulin response thing actually cancels out calories?

I'd like to know that as well, and if that applies to any other type of food or just protein supplements...

The majority of the carbs are from sugar alcohols which are essentially indigestible. They actually end up fermenting in the gut which provides a couple of grams of carbs, but that is about it.
