While on a cut diet, how many grams of sodium should I be intaking / day, and why?
Just keep it consistant from day to day. Your body will adjust accordingly. Only fluctuations up and down will allow you to retain/shed water. That's why bodybuilders keep their sodium intake high until the week of the show - they can lower their sodium intake and lose excess water before their body has time to adjust. A consistantly low sodium intake will result in your body hoarding every mg of sodium possible.

Will consistantly intaking low sodium (500mg-1000mg) make someone look less bloated compared to 2g +?
No. There's not much of a variance there. The difference between 500mg and 2g is a can of tuna and a few slices of wheat bread, for example. <500mg and >5000mg is a different story.
