How long will it last out of the fridge?

Unopened, quite a few months (supposedly). They do store it out in the open in the supermarket. Opened, don't leave it out, even for a few minutes. No preservatives in it= petri dish.

the fats in nat pb can easily go rancid without necessarily smelling bad. That is why they take out the natural fat-peanut oils and replace it w/ partially hydrogenated oils in the commercial brands

thats why they add the lovely sugar as it last longer and makes the product sweeter, see sugar is not all bad.

Plus if you leave it out, all the fat will float to the top making it a pain to get out without drenching your bread in oil.
