Just wondering, I don't eat fried foods myself, but do vegetables lose nutritional value once they hit the fryer? I can understand the fat content will go up, especially if something is deep fried, but will it lose anything else??

I like to saute my chicken and pork chops with extra virgin olive oil (or at least my wife does), besides adding some fat into the diet what else will it do?

I meant to say that I don't eat fried foods - TOO often. :)
