Im 6' 175lbs, stuck at a 200lbs x 1 rep only bench press....
Any diet advice?

your problem can be a lot of things.. are you getting stronger in everything else? -- If yes, diet isn't to blame for your lagging bench. It could be your routine, or maybe you just aren't built for benching.
If no to the first part: Are you gaining/losing/maintaining your current weight? If your losing/maintain, then it's time to up the calories if your goal is strength/gaining muscle. Start with 500 more then you've got already and try that for a few weeks. Should be about a pound a week gain. Make sure your eating clean.
If your gaining weight, but not getting any strength gains/going anywhere.. then if you are eating right (getting enough protein/fats in your diet (i'll assume carbs aren't a problem)) then i'd look at your routine. Probably time to change it up.
