I take in 75g's of carbs after a workout
malto,dextro,gluco and some fructose
I find it keeps my metabolism humming (hard for me)
and it keeps my carb intake low for the rest of the day
if I didn't do it I would tend to eat lots of carbs right up until bed

That mix of carbs Holto says is a pretty good mixture if you want your insulin spike up very quick. Maltodextrin is just one of the carbs that is used for the insulin spike, you do not neccesarily have to use that one, a moderate amout of dextrose would do also if you want a quick spike. It would be okay to use 75g on a cutting phase because your muscles are taxed and the glycogen level is way low, this would shuttle the protein in and refill the glycogen levels stopping any catabolism. This is the only time I would use such high carbs while on a cutting phase...IMO.

You still want your post workout shake, albeit maybe to a smaller degree than you were bulking. Keep the protein high, and maybe lower the carbs a bit...or even just keep the shake as a good amount of the carbs you are going to have.
