what are some examples of high GI carbs and Low GI carbs?

High = shuga water =P (hehe say white bread or pastries)
Low = oatmeal/veggies/whole meal foods

so is high gi carbs more like simple sugars, rather than complex carbs?

yes
as a general rule, the more natural it is, the better and lower GI it is (OJ high and bad, oranges low and good)
the lowest GI carbs are in legumes and lentils like soybeans and pinto beans and such

Somewhat true but not necessarily.
eg.
white bread = complex but high gi
lactose = simple sugar but low gi
