Chocolate Mousse Pie
Ingredients
9" pie crust
1 beaten egg
4 cups heavy cream, divided
16oz bittersweet chocolate
2tbs cognac
7tbs sugar or sugar substitute
chocolate curls (optional)
1. Prebake pie shell, remember to brush with egg and poke holes in bottom of shell
2. over medium heat, simmer 1 cup of heavy cream, remove from heat and add chocolate, stir til smooth, add in cognac *if using cognac*
3. transfer to bowl, cool to room temp for 20 minutes
4. beat 2 1/2 cups cream and 6tbs sugar until soft peaks form, fold whipped cream, 1 cup at a time into chocolate until blended.
5. cover with plastic wrap, refrigerate for one hour.
6. if you plan to pipe the pie, spread 2 cups of mousse into pie and transfer rest into a pastry bag, fitted with large star tip.
7. pipe remaining mousse in rosettes over pie, refrigerate til ready to serve.
8. beat remaining cream and sugar until stiff, transfer to bag with small star tip, pipe whipped cream around edge of pie, garnish with chocolate curls.
