Tokyo Tuna
This Asian-inspired dish can be whipped up in a flash. Serve over steamed aromatic rice, such as basmati or jasmine,or over soba noodle,which are made with buckwheat and are available in Asian markets.

2 teaspoon peanut oil

1 small garlic clove, minced

2 medium scallions, finely sliced

1 teaspoon minced garlic fresh ginger

2 tablespoon soy sauce

pinch sugar

6 oz. can Solid White Tuna in Water, drained
Heat a heavy medium skillet over moderately high heat until almost smoking. Add the oil and tilt to coat the bottom of the pan. Add the garlic, scallions and ginger and stir-fry for 1 minute, until fragant and golden. Stir in the soy sauce, sugar and 1/3 cup water. Bring to a boil, add the tuna and cook, stirring, until heated through. Serve immediately over rice or soba noodles.

Quick and Easy Tuna Casserole
Prep Time: approx. 5 Minutes. Cook Time: approx. 25
Minutes. Ready in: approx. 30 Minutes. Makes 5 to 7 servings
1 (12 ounce) package egg noodles
2 cups frozen green peas
2 (10.75 ounce) cans
condensed cream of mushroom soup 2 (6 ounce) cans tuna, drained
1 onion, chopped
10 slices American processed cheese
ground black pepper to taste

1 Bring a large pot of water to a boil. Add noodles and
frozen peas. Cook until noodles are al dente, drain well.
Return noodles and peas to the pot.
2 Mix soup, tuna fish, onions, processed cheese and
pepper into the pot. Stir constantly until all of the
ingredients are well mixed and the cheese has melted. Serve.

Old Fashioned Macaroni Salad with Tuna
2 cups (150g) macaroni, uncooked
1 cup (150g) celery, chopped
1 cup (150g) red bell pepper, chopped
1/2 cup (90g) red onion, chopped
1/2 cup (75g) cucumber, cubed (optional)
6 1/2 ounces (185g) tuna in water, canned, drained (optional)
1/2 cup (115g) light sour cream
1/4 cup (60g) light mayonnaise
1 clove garlic, minced
2 tsp (10mL) lemon juice, fresh
1/2 tsp (3g) salt
1/4 tsp (1g) black pepper
Cook macaroni in a large pot of rapidly boiling water until done. Rinse with cold water and drain.
In a large bowl, gently mix macaroni, celery, red pepper, red onion, cucumber and tuna (if used) together.
In a medium bowl, mix sour cream, mayonnaise, garlic, lemon juice, salt and pepper.
Add mayonnaise mixture to macaroni mixture and toss together.
Refrigerate until serving time.
