Sometimes we like to eat high GI foods for the sake of keep us sane. Anyways here are a couple of tips on lowering their GI ratings, I'm sure you already knew the first two:

The addition of fat or fiber slows the rate of digestion and lowers GI. It is best, however, to focus on including more fiber rather than relying excessively on added fats. Naturally occurring acids in foods, such as fruits and yogurt, also have a lowering effect. Adding vinegar or lemon juice to a meal can reduce the GI by approximately 30 percent.
