Yummy yummy- made this for dinner last night even though it is a "breakfast"
1/2 lb fresh deer sausage (country sausage)
6 eggs (3 whole, 3 white)
1 cup salsa
1/2 cup lowfat cheese (like colby jack)
1 can beans of your choice (drained)
Brown deer in frying pan on med high heat (make sure cooked though ~ 185 deg F)
Add beaten eggs/whites and scramble with eggs ~5 min on med heat)
Add salsa (up to 1 cup) to mixture and continue to stir and heat
...Meanwhile heat up beans in microwave until steamy...
Pour out beans onto a warm plate, top beans with egg and sausage mix.
Add cheese on top and voila!
macros: pro = 110 g carbs 40 g (12 fiber) fat = 20
total cals = 778 !! :evillaugh:
