OK, here's the deal:
-I took in an average of 1750 Cal/day for the past week with 1 cheat day of 4000+ Cal.
-I did cardio 4 days for 1/2 hour/day.
-Supplements were ECA stack and multivitamin.
-Good water intake.
-I'm at a high but healthy body fat (14-17% estimate).
-Did solid training
-Gained 2lbs.
With my deficit diet, I shouldn't be gaining weight. No way. I weigh in at 190.5 last saturday and 192.5 this week.
I do a very good job of recording what I eat. I might be 100 calories off in a day from things like creamer in the coffee and picante sauce on my cottage cheese, but I can't imagine that I'm much further than that off. What gives? What should I do?
What and when were you eating during those days?

I eat about 5 meals a day + post workout shake. Small meals.
At 190 pounds give or take, I think you aren't eating enough. If I were you, I'd up the protein to around 250-300 grams. And keep your carbs contained within 1-2 hundred. Or cycle them, having days of one, two, and three hundred. Cycling low, medium, high, medium, low, ect, ect. If this doesn't work, than you can throw two low days in a row.
Also, am I correct to assume in your journal the foods are spread throughout 5-8 meals?

Your body weight does fluctuate from week to week depending on many factors. Wait another week before getting worried IMO. But I've never gone on a cut myself so what do I know =). I am always "bulking" and sometimes I weigh less then another week (about 1lb or .5lbs) but the trend is upwards so I don't worry. 2lbs might be pushing it though...

This is the second week of this (first week I lost 1/2 a pound with 1700 cal/day diet). I know that I'm way under maintenance on my diet (I usually maintain a steady body weight at about 2800 Cal/day without cardio).
Meals are spread throughout the day. Every 3-4 hours I'll eat.

sometimes my bodyweight can fluctuate 8 lbs over the course of a day

Hrmm true... I guess the more BW you have the larger your fluctuations. More based % of BW then actual poundage. That plus you must take some large :fart: :p

I weigh myself same time every Saturday morning. 1 hour after I wake up, eat my first meal and make my first deposit.

I agree with BCC. You might not be taking in enough cals. If you know that you can keep a constant bw at 2800 cals a day then I would try keep cals at around that number for a swlo drop in bf. Try and not go too low because you are already burning cals with the cardio. Maybe 300-500 below maintenance and see what kind of results you get. Keeping cals too low could slow your metabolism down.

Although your metabolism wouldnt slow down enough to gain weight. I would say increase your cals and go from there. It was probably just water weight etc. Increase cals and give it some time.

bump up the callories to 2000-ish. they are a smidge to low.

if you maintain at 2800, 2000 should still be too low, too. calorie deficit to lose 2ish lbs a week is only 500.

Yeah, good point. But I'd say his current calories are a bit on the low side.
2300-2400 would seem like a good range.

I honestly dont think 2 pounds in one week is much to judge on. I go up and down in weight 1 to 4 pounds threw out the week. If this is consistent then I agree with all of the above as your answer.

You have probably gained 2lbs due to fluctuations in bowel motion etc
One day a week measures of weight allow large variation in these things.
You should take daily measures, first thing in the morning after 'voiding' then potentially average out the daily measures into a weekly measure.
