I was looking at cyberdiet.com and noticed that there are entries for chicken breast (raw, stewed and roasted). The stewed and roasting methods entries have increased fat and decreased protein. If I were to just boil the chicken would this increase the fat, or do those stewing and roasting account for oil and such things you would use to cook them?

use the values for raw chicken. it is difficult to know exactly what they mean by stewed or roasted (very clintonesque!). Bottom line, protein/fat in = protein/ fat out
