OK. I've search for articles but I'm looking for a SIMPLE explanation in laymens terms. Nothing complicated or scientific.
Why is it good to consume carbs and protein after a workout and as part of your regular meals when you're weightlifting? What does it give you and what happens? ThANKS!

Causes quicker than usual insulin release which:
a. Reduces cortisol.
b. Promotes intramuscular nutrient uptake.
c. promotes protein synthesis.
And then there's the glycogen resynthesis and what-not.

A stress hormone released by the adrenal gland. It is what breaks down muscle protein to get glucose to use for energy. If you've ever heard the saying of something being "catabolic", you can bet your bottom dollar that this bad boy is the root of the problem.
However, without it, the human race wouldn't be in existance today, so in some weird way we do need to be thankful for it.
