In the initital hours of a refeed, how high GI ought the carbs be?
Is, say, 75-80 (glucose being 100) sufficient?
Or am I worrying too much about minutia?

I think you are worrying to much. I think the general rule of thumb when doing a refeed is to consume a majority of your carbs from the high GI quality.

Yes, surprisingly enough, you are worrying about minutiae. ;)
Par says that leptin expression is triggered by glucose metabolism (the insulin spike). Just watch your fructose intake and go to town on highly insulinemic stuff.

Just enjoy your refeed, GI does not matter when your overfeeding as the insulin response will be exaggerated anyway.
