Okay, the recipe below is very very good. You can exchange the chicken for shrimp if you like.


2 Cups cooked white rice. Taste best if you make it a day before (if you want to use brown rice that is cool too).
2 Egg whites (I use ½ Cup of Better n’ Eggs)
¼ Cup Frozen Peas.
1 Cup Chicken Breast.
½ Been Sprouts.
1 TBS low- Sodium soy sauce.
¼ Cup Drained Bamboo Shoots.
¼ Cup of Green Onions
Cooking Spray

Coat a sauté’ pan with cooking spray. Scramble the eggs until firm and remove. Coat the pan again and sauté’ the bean sprouts, bamboo, peas and green onions until heated through. Around this time, the smell should be driving you crazy. Remove and add to the reserved eggs. Re-Spray the pan/ Cook the rice in the sauté’ pan, stirring occasionally, until it starts to get brown. Add the chicken, soy sauce, bean sprouts, bamboo shouts, eggs, peas and green onions. Mix well and you are done.

I have prepared this many times and have people drop by to and try it. Now when I serve it to them they have no idea it is good for them and they say they enjoy it very much. In fact, once I tell them it is diet food, they rave about how good it is.
