But why is Sugar bad for you? I've never really found out the answer to this.

Sugar is mainly associated with empty calories, and sugar will not offer much in the way of appetite control. Basically it does not offer much nutritional value and high sugar intake could be a contributing factor to health problems.

Also, when you insuline spikes (from sugar), doesn't your metabolism switch from burning fat to burning carbs?

Yes that is a correct statement. Insulin is a lipogenic/anti-lipolytic hormone.

The plain and simple of why sugars are bad is insulin response. Increased blood sugars result in insulin secretion. Too often, and the response will be over secretion of insulin to try to nip it. This leads to yet another drop of bloodsugars, so it becomes a vicious cycle. Not to mention one of the leading causes of onset juvenile diabetes. Post workout is the only time you want this. (In the morning you are a bit insulin sensitive, so this is also a good time for some fairly simple sugars). Other than that, steady bloodsugars are a must for steady gains.
