View Full Version : Semi healthy Fajitas

OK guys and gals pick this recipe apart. Tell me is it good or bad.

If it's bad tell me how to fix it.

1lb lean steak cooked on the grill
1 large onion cooked till tender in extra virgin olive oil
Shrimp cooked in a little bit of olive oil
Fiesta rice*
Fajita shells

Prepare fiesta rice per recipe
grill steak Cut on the diagonal
Cut onion into large chunks. cook in olive oil till tender
Cook shrimp till pink.
Heat fajita shell in dry frying pan till warm and pliable.

Assemble all ingredients inside fajita shell add some grated cheddar if ya want and dig in.

*fiesta rice

1 can chicken broth
1/2 cup salsa
1/2 cup water
2 cup minute rice

Combine chicken broth, salsa and water bring to boil. Add rice. Remove from heat and cover for 5 minutes. Fluff with fork and dig in.

the minute rice and fajita shells aren't the best... better than eating junk food, but the minute rice especially is not one of your better carbs

I'm generally a carb-avoider from now on, even when I'm not trying to be in keto, so for myself, i'd eliminate the shells and serve the ingredients in a bowl... if I was going to keep the rice, I'd use steamed brown rice instead (lower GI)

in general terms that looks pretty healthy though

I've been wanting to try wheat wraps.
Whats wrong with minute or quick rice? What do they do to it that makes it differant. I am curious cause quick rice is all I eat. I've heard it was worse, but also heard regular rice is a pain.
