Is it alright to boil or steam veggies? Does it kill any nutrients by doing so, as apposed to eating them raw; ie. broccolli, cauliflower?

You might lose some of the vitamins due to cooking your vegetables but it is not something that I would be concerned about.

don't carrots increase their value if you cook them? or is that a different vegetable...

Yes, that is true for carrots, and this is supposedly caused by the fact that the phenolics are able to be released when the carrots are cut up or cooked.

I eat most of my veg raw because I like it like that but cauliflower and broccolli I have to steam for a few minutes because they taste too strong for me.
