1/2 cup instant rice (I used minute rice)

1/2 cup water

1 cup broccoli florets or pieces

3 oz. cooked chicken breats strips, cubbed

2 tsp. Dijon mustard


Black peper, to taste

Easy Steps

1) Cook rice according to microwave directions in large microwave-safe bowl.
2) After rice is done, place broccoli on shallow dish with one inch of water and cover with lid or plastic wrap. Heat in microwave two to three minutes; drain.
3) Add steamed broccoli to cooked rice; stir in chicken and mustard. Roll lemon on counter to release juice; cut in half. Squeeze juice from half the lemon onto dish (use the other half lemon to flavor a glass of cold water). Sprinkle dish generously wih black pepper. Mix and enjoy.

How it tasted: I'm a pretty big fan of rice dishes so I really liked this one. I really hate Dijon but used it just to follow directions. Next time i'll only use 1/2 tsp of Dijon. The taste of the Dijon adds more flavor to it though. The lemon really adds to this meal b/c it works very well with the Dijon mustard. Lemon water was also a nice change.
