With my daily work shift I don't have time to cook. I'd like to take a few hours a week to cook and prep meal portions and store them in the cheapo Zip-Loc containers.
My question regards primarily carb intensive foods (rice, potatoes, etc.) and veggies. So far refrigeration has been OK but I'm wondering if anyone here cooks and freezes portions or meals, and what can be frozen without losing flavor/consistency/nutrition or have problems with reheating. I can cook meat and wrap/freeze that with no problem. But can I freeze a half of a baked potato with little negative effect? Brown rice, corn, etc...?
I have access to both a microwave and broiler-over at work to reheat stuff.
