Jack and Coke Pork Loin Roast

5lbs Pork Loin or similar
1 cup Jack Daniels
1 cup Lea & Perrins Worcestershire Sauce
3-4 cups sliced mushrooms
2 cups Coca Cola
5 cloves garlic
Sea Salt
Cracked Pepper

rub the sea salt and cracked peppercorns into the pork loin, to your taste

marinate the pork loin in the jack, coke and worcestershire sauce overnight, then put it all in a big roasting pan. Put the roast in the pan "fat side up". Add a little water if you need to, to fill up the pan till there's 1" of liquid around the roast

slice the garlic into slivers and insert the slivers into little slits you make all over the pork roast, thereby infusing the garlic directly into the meat

dump the mushrooms into the liquid around the pork

roast in the oven at 325 degrees for ~20 mins per pound of roast, occasionally opening up the oven to scoop liquid up and spread it over the top of the roast, ensuring flavour and carmelization of the fat

remove from oven, slice and serve... if you want, take the pan drippings and thicken 'em to make thicker gravy but I like the roast 'au jus' just with the drippings on it

Calories: Who knows. It's not TOO bad for you though and it tastes very very good.

Possible substitution: I have made the same thing using Guinness instead of Jack and Coke, and it turned out very well also!

One upgrade to this recipe from my point of view, would be to add another serving of Jack Daniels, coupled with another coke, and serve this as a side, maybe garnish with ice. ;)

of course I kinda figured that went without saying, but it can't hurt to spell it out for the newbies. :D
