My mom got this horrible sounding stuff at the store that she wants me to try cooking with. The box says "Garlic Juice" on it, and she says the advantage is that it keeps the garlic from burning when you're sauteing something. I think it would wound my pride as an Italian to use something called 'garlic juice', but has anyone ever tried this and had success with it?

I thought this was interesting. (http://www.ncbi.nlm.nih.gov/entrez/query.fcgi?cmd=Retrieve&db=PubMed&list_uids=7431442&dopt=Abstract&holding=f1000)

I did find this though:

Maybe there is something to it. I personally hate garlic so I'm probably not the best person to be anwering this.

McCormick makes onion juice and we use it at our house a lot, especially since I won't consume chunks of real onions :) I can't see why it would be any different, plus who likes the taste of charred garlic *yuck*
