What specific function do knee and wrist wraps peform? As I've gotten into heavier squats and a larger volume of pressing I've defnitely become more interested in them.

Knee wraps allow you to use more weight, period.
Wrist wraps help to support the joint (prevent it from "giving out").

i have found that wrist wraps weakin ur wrists.. so when u dont use them they give out more.. that i do not like... thick wrists not noddles!
